There is a lot of talking about love these days; it almost seems that it’s more than ever. With all the pandemic sentiment going on, and then the political/social movements, love is being brought up in all kinds of public ways, louder than ever. I don’t know if you are noticing that too.

Red hearts are being displayed on the lawns, with all other signs stating kindness and care. Lots of parading with Love-Love-Love being in the center of it all: love for others, for those who are not loved, who look different, live differently. Care for them kindly, be kind, make everyone believe that they matter.

When I look closer at this passionate public display of feelings and passions, I keep failing to see the real thing behind it all. To me it seems that we are distant more than ever, not loving. Lots of people around us don’t feel all that much love, or care, as all the parades seem to project. Harshly painful statistics, the saddest statistics of all, are the obvious prove: the numbers of those who are not loved keep rising, daily.

What is happening? Why so much talking, and so little doing?

It almost looks like we, as a society, losing the ability for genuine love, or care. Not on a personal level perhaps, but as communities overall. We exclude much easier, than include, or embrace, even when we eagerly display all those signs & red hearts on our lawns.

I personally do not believe any of those lawn signs, at all. Maybe it’s because I have issues with believing, but I always think that if the stuff was real, it would not be hard to recognize it, especially when it involves love.

Genuine is being lost. Fake is dominating. Public looks. Not the actual care. I don’t think we even know how any more. And that’s a shame, because in the times of hardship, like plague, or war, the times of uncertainty, as we are living in now, times of despair, or any times really, the one thing that we humans need the most, is to know that we matter. We need to know that there is a soul out there that truly cares about us, and just by knowing that, we somehow miraculously manage to move forward through harshness of life; we survive. It’s just that easy.

Mulled Wine Apple Rose Tarts

Crust:

160 g butter, frozen, cubed

330 g flour

2 eggs

½ teaspoon salt

3 tablespoons sugar

In a food processor mix flour, salt and sugar. Add cubed frozen butter and process until uniformly incorporated. Add eggs and mix until dough forms. Flatten dough into a disc, wrap in plastic wrap and refrigerate at least 3 hours, or overnight.

Roll out chilled dough on lightly floured surface, cut into circles and line into buttered tart pans, chill.

From remaining scraps of dough cut out leaves, place on parchment lined baking sheet, brush with milk, sprinkle with turbinado sugar.

Bake chilled crusts and leaves in 350oF oven until lightly browned. Remove from oven. Let cool.

 

Apples:

3 - 4 firm apples 

1 ½ cup mulled wine

½ cup cranberries or blackberries, fresh or frozen

1 orange, zested & juiced

1/3 cup sugar

Cut apples in half, slice into thin slices. In a small saucepan heat wine, cranberries or blackberries, orange juice and sugar until berries are broken down. Add apple slices, cook for 1 minute. Remove pan from heat, cover, let cool.

 

Filling:

3 tablespoons butter, at room temperature

½ cup ground almonds

1 egg

¼ cup sugar

1 teaspoon ground cinnamon

1 tablespoon flour

zest from one orange

pinch of salt

Cream butter and sugar together. Add egg and mix until incorporated. Add ground almonds, flour, cinnamon, orange zest and salt, mix until uniform.

Divide filling mixture between tart shells, spread into even layer.

Strain apples, arrange slices on top of the filling into roses, bake at 350oF until filling is set, 15-20 minutes. Remove from oven, insert baked pastry leaves into filling. Let cool.

 

 

 

 

Obuolių ir vyno rožės

Recepto šaltinis: twigg studios

 

Tešla:

160 g sviesto, įšąlusio, supjaustyto kubeliais

330 g miltų

2 kiaušiniai

½ šaukštelio druskos

3 šaukštai cukraus

Virtuviniame kombaine sumaišyti miltus, cukrų ir druską. Suberti susmulkintą sviestą ir sukti kol sviestas tolygiai pasiskirstys miltuose. Sudėti kiaušinius ir sukti kol susiformuos tešla. Tešlą dėti ant maistinės plėvelės, suformuoti į diską, įsukti ir padėti šaltai, 3 valandoms arba pernakt.

Atšąlusią tešlą plonai iškočioti ant pamiltuoto paviršiaus, įkloti į sviestu išteptas pyragaičių formeles, padėti šaltai.

Iš tešlos likučių išpjaustyti rožių lapus, juos dėti ant sviestiniu popieriumi išklotos skardos, patepti pienu, pabarstyti rupiu cukrumi, kepti 175oC orkaitėje kol lengvai paruduos. Traukti iš orkaitės, palikti kad atvėstų.

 

Obuoliai:

3 - 4 obuoliai 

1 ½ stiklinės saldaus raudono vyno

½ stiklinės spanguolių arba gervuogių, šviežių arba šaldytų

1 apelsino sultys

1/3 stiklinės cukraus

Obuolius perpjauti pusiau, supjaustyti plonais griežinėliais. Nedideliame puode užvirinti vyną, uogas, cukrų ir apelsino sultis. Virti kol uogos sukris. Sudėti obuolių griežinėlius ir virti 1 minutę. Nukelti nuo ugnies, puodą uždengti, palikti kol atvės.

 

Įdaras:

3 šaukštai sviesto, kambario temperatūros

½ stiklinės maltų migdolų

1 kiaušinis

¼ stiklinės cukraus

1 šaukštelis malto cinamono

1 šaukštas miltų

Apelsino žievelė, smulkiai sutarkuota

Žiupsnelis druskos

Išsukti sviestą ir cukrų. Įmušti kiaušinį ir gerai išmaišyti. Suberti maltus migdolus, miltus, cinamoną, tarkuotą apelsino žievelę ir druską, išmaišyti.

Ant atšąlusios pado dešlos dėti įdaro sluoksnį.

Nukošti obuolių griežinėlius, iš obuolių ant įdaro suformuoti rožes. Kepti 175oC orkaitėje maždaug 15-20 minučių, kol įdaras sukeps.

Traukti iš orkaitės, į pyragaičius susmaigstyti iškeptus lapus. Palikti kol pilnai atvės.
