I got a new book as a gift. Middle Eastern Sweets by Salma Hage.

Thank you Robert!

Sweet recipes for halva, and Turkish delight, and Persian marzipan, and Lebanese pancakes, and cookies, and much much more. Desserts and confections made with tahini, almond flour, pistachios and dates, flavored with orange blossom & rose water. Delicious fragrant magical treats, almost mystical, as if they were coming from places far far away: Lebanon, Turkey, Syria, Persia & Palestine. All those places that are torn by wars. 

If there is war somewhere, we all live at war, even if the destruction seems far away. Today‘s world has become way too small, no place is fully isolated, all and everyone is intertwined, connected, we all have friends or relatives living someplace else, across the ocean, or across the country borders. If there is hurt and devastation somewhere, we all start feeling it, even if it does not hurt or damage us directly, the life at peace is just an illusion, and we can only pretend for so long. 

It is hard for me to understand, or come up with a reasonable explanation, how during these civilized times it is still possible to create such atrocities. In the times with such advancements and achievements, we can still wake up one day and find out that the cities are being bombed, people have to flee their homes, kids can not go to school and their parents do not have any certainity about the future. Are they going to have anything to eat today and tomorrow? Will they have a place to sleep? 

I remember a few years ago a woman that I used to work with left her life in the US, in Lansing NY, and returned back to Tel Aviv, to live there for good. She was still a consultant for our company in the US, and we used to have video conferences once or twice a week. Sometimes she would call in early and ask to reschedule the meeting because she had to go to a bombing shelter. 

Another story: I was reading Sami Tamimi‘s book Falastin, with recipes and stories from refugee camps in Gaza, with pain and destruction woven into every page and recipe. It was heartwarming and heartbreaking to read that beautiful intimate book. I cried a few times. 

I am just so not cut for that type of life. I don‘t think anyone is. 

Ukraine is at war now. Hard to comprehend, again, how this can be happening, in 2022, in the heart of Europe. 

It feels like Lithuania is at war too. Uncertain what‘s coming next. Watching airways being shut down, economies collapsing, people fleeing, neighboring countries accepting refugees. A total madness. 

While the world is rapidly shifting towards chaos and despair, I am making date & tahini truffles, sweet halva with pistachios, hazelnuts and chocolate nibs, adding warm honey, and rose water, and orange blossom water to all those sweet delicious mixtures, and my kitchen smells like fairytale, like some magical place, promising, happy, inviting. 

Then I make some strong tea, and drink it from tiny glass cups with gold rims. My parents got those small cups in Algeria and brought them home, a long long time ago. Then my mom brought them to US, for me to have, and all memories came with tem.

Turkish Delight

1 ¾ cup (350 g) sugar

½ cup (100 ml) orange juice

Juice of ½ lemon

½ cup (60 g) cornstarch

½ teaspoon cream of tartar

½ cup (50 g) pistachios

1 tablespoon orange blossom water

Grease a rectangular loaf pan with oil. Set aside. 

In a large pot cook sugar, orange juice, lemon juice and ½ cup water for 15 minutes. 

In a separate pot mix cornstarch, cream of tartar and 1 cup of water, heat on medium heat, while whisking constantly with an electric mixer, until thick and translucent. 

Add small amounts of hot sugar mixture into the cornstarch mixture, while whisking constantly. 

After all sugar has been added, turn heat to the lowest setting and cook for 1 hour, mixing gently every 5 minutes. 

Remove from heat, stir in pistachios and orange blossom water. Transfer mixture into prepared loaf pan. Let chill overnight. Cut into small squares. Coat in powdered sugar and cornstarch mixture. Store in an airtight container. 

 

 

 

Tahini & Chocolate Date Truffles

Large Dates

Tahini

Dark Chocolate

Remove pits from dates. Fill with tahini. Freeze until firm. Coat in melted chocolate. Freeze or refrigerate until chocolate hardens. Store in an airtight container. 

 

 

 

 

Halva

¾ cup (170 g) honey

¾ cup (170 g) tahini

Nuts, cocoa nibs, dried fruit

In a medium saucepan, cook honey for 5  minutes. Remove from heat. Add tahini, stir until smooth. Add nuts, or cocoa nibs, or dried fruit, mix. Transfer into a parchment-lined baking pan or deep dish. Refrigerate until firm. Store in an airtight container. 

 

 

Power Balls

½ cup (50 g) oats

2 cups (250 g) dates, pitted, chopped

⅔ cups (50 g) shredded coconut 

¼ cup (50 g) tahini

1 tablespoon chia seeds

1 tablespoon sesame seeds

Pinch of sea salt

In a food processor pulse oats until broken down but not floury. Add remaining ingredients, pulse until uniform. If the mixture looks too dry, add a couple teaspoons of water and pulse again. Form bite size balls, coat in shredded coconut. Refrigerate until firm. Store in an airtight container. 

 

 

Persian Marzipan

½ cup (75 g) almond flour

½ cup (50 g) powdered sugar

½ teaspoon cardamom seeds, ground

1 teaspoon rose water

¼ cup (30 g) sugar

Slivered almonds and pistachios

In a food processor mix almond flour, powdered sugar and cardamom seeds. Add rose water and mix until uniform paste forms. Shape into bite size cones. Roll in sugar tu coat. Into the wider end of the cone push in almond or pistachio sliver. Refrigerate until firm. Store in an airtight container. 

 

 

 

Turkiškas skanėstas

1 ¾ stiklinės (350 g) cukraus

½ stiklinės (100 ml) apelsinų sulčių

½ citrinos sultys

½ stiklinės (60 g) kukurūzų krakmolo

½ šaukštelio vyko akmens miltelių

½ stiklinės (50 g) pistacijų

1 šaukštas apelsinmedžio žiedų vandens

Kepaliuko formą ištepti aliejumi. 

Dideliame puode sumaišyti cukrų, apelsinų sultis, citrinų sultis ir ½ stiklinės vandens.Virti 15 minučių.

Kitame puode sumaišyti krakmolą, vyno akmens miltelius ir 1 stiklinę vandens. Kaitinti ant silpnos ugnies, pastoviai plakant elektriniu mikseriu, kol mišinys taps tirštas ir skaidrus. Į krakmolo mišinį pamažu plona srovele supilti karštą cukraus mišinį, pastoviai plakant. Toliau virti ant silpnos ugnies, retkarčiais pamaišant, 1 valandą. 

Nukelti nuo ugnies, supilti apelsinmedžio žiedų vandenį, suberti pistacijas, išmaišyti. Mišinį perdėti į paruoštą formą, išlyginti paviršių, padėti šaltai, kol sustings. Supjaustyti kvadratėliais, apvolioti cukraus pudros ir kukurūzų krakmolo mišinyje. Laikyti sausai. 

 

 

 

Šokoladiniai datulių ir tahini triufeliai

Stambios datulės

Tahini

Tamsus šokoladas

Iš datulių išimti kauliukus, šaukšteliu į datulių vidų įdėti tahini. Dėti į šaldiklį kol sustings. Sustingusias įdarytas datules aplieti šokoladu ir vėl dėti į šaldiklį, kol šokoladas sukietės. Laikyti šaltai. 

 

 

 

Chalva

¾ stiklinės (170 g) medaus

¾ stiklinės (170 g) tahini

Riešutų, skaldytų kakavos pupelių, džiovintų vaisių

Vidutinio dydžio puode kaitinti medų, kol užvirs. Toliau virti dar 5 minutes. Nukelti nuo ugnies. Sudėti tahini, išmaišyti. Suberti norimus priedus, vėl gerai išmaišyti. Masę sukrėsti į sviestiniu popieriumi ištiestą indą, padėti šaltai, kol sukietės. Laikyti sandariai uždarytame inde. 

 

 

 

Energijos kamuoliukai

½ stiklinės (50 g) avižinių dribsnių

2 stiklinės (250 g) datulių, susmulkintų

⅔ stiklinės (50 g) kokosų drožlių

¼ stiklinės (50 g) tahini

1 šaukštas šalavijų sėklų 

1 šaukštas sezamų sėklų

Žiupsnelis jūros druskos

Virtuviniame kombaine pasmulkinti avižinius dribsnius (nesumalti į miltus). Sudėti likusius ingredientus, malti kol susiformuos vientisa masė. Jeigu masė peer sausa, įpilti porą šaukštelių vandens ir vėl gerai išsukti. Iš masės formuoti kąsnio dydžio rutuliukus, apvolioti kokoso drožlėse, padėti šaltai, kol sukietės. Laikyti sandariai uždarytame inde. 

 

 

 

Persiški marcipanai

½ stiklinės (75 g) migdolų miltų

½ stiklinės (50 g) cukraus pudros

½ šaukštelio kardamono sėklų, sutrintų grūstuvėje

1 šaukštelio rožių vandens

¼ stiklinės (30 g) cukraus

Skaldytų migdolų ir pistacijų

Virtuviniame kombaine sumalti migdolų miltus, cukraus pudrą ir kardamono sėklas. Supilti rožių vandenį ir toliau sukti, kol susifomuos vientisa masė. Iš masės formuoti kąsnio dydžio kūgelius, apvolioti cukruje. Į kiekvieną kūgelį įbesti skaldytą migdolą arba pistaciją. Padėti šaltai kol sukietės. Laikyti sandariai uždarytame inde.
