Thanksgiving 2020
This year, it was Thanksgiving for three; plus one; plus dog. We had our holiday dinner on Sunday instead of Thursday. Because I was not sure if/or when I am going to have an access to the kitchen. So I decided to beat all the unforseeable circumstances, and cooked our holiday dinner a few days earlier. I roasted a smaller turkey. I made stuffing with leftover cornbread waffles that were frozen since Fat Tuesday. I mixed two kinds of salads. We did not need to travel anywhere, and we avoided all the uncomfortable post-election conversations. Small turkey cooked so much faster. And it tasted so much better than the huge ones that I usually cook. Dinner preparation was low key, no rush, easy going. We ate, and it was all delicious. After dinner we made fire. We heated up some hot drinks, brought them all outside, and sat by the fire, sipping hot cider & hot toddies, for a long time. It was a perfect day. I felt thankful, and grateful, for so many wonderful things that happened this year. Thanksgiving 2020 felt fully complete, not one thing was missing.
